What’s Happening Wednesday? - What’s Cookin’ ?

SUPER YUMMY STEW, that’s what’s cookin’…

And that’s because it is SO EASY!! You have to know by now if I am cooking and especially if I am sharing it’s gotta be EASY!! So, here is my RECIPE for SUPER EASY slow cooker stew…

What you gotta have:

* Slow Cooker – HAHA!! Mine is a 5 quart size. You can EASILY half this to fit in a standard sized slow cooker!

* 2 pounds of Stew Meat

* Flour

* Vegetable Oil

* 1 Two quart bottle of Vegetable Juice (like V-8)

* 8 medium to large Yukon Gold Potatoes

* 1 medium Yellow Onion

* Minced Garlic

* 2 – 12oz bags of frozen Sliced Carrots

* 1 – 12oz bag of frozen Corn

* 1 – 12oz bag of frozen Peas

* Oregano

* Thyme

* Rosemary

* Basil

* Mrs. Dash Seasoning

* Pepper

* Seasoning Salt

* Garlic Powder

* Beef Bouillon Granules

OK, to start… throw the stew meat into a large bag with the flour and get your pan of oil hot. I season the meat a bit with pepper, seasoning salt, garlic powder and Mrs. Dash. Get the stew meat all brown and crispy!! **Don’t worry about cooking the stew meat all the way through, it will cook in the slow cooker!

While the stew meat is browning, dice your onion and potatoes. The onion, potatoes and garlic are the first layer in the bottom of the slow cooker…

Next add the two bags of sliced carrots, then the corn and then the peas…

Add the browned stew meat. Now for the spices… I don’t measure I just sprinkle, a lot, until it looks good to me! Lots of basil, a bit of oregano, some thyme, a smidge of rosemary, fresh ground pepper and LOTS and LOTS of Mrs. Dash!! Also a couple more tablespoons of garlic, we are garlic freaks, so you can add to your tastes. Two or three tablespoons of the beef bouillon granules…

Then just pour the WHOLE bottle of vegetable juice slowly over the top…

RESIST the urge to stir, so the potatoes stay on the bottom to cook!! Put the lid on the slow cooker, mine has 2 settings low and high, set on high and just let it cook…

WAHOO!! About 9 hours later you have the MOST AMAZING, YUMMY, HEARTY bowl of stew!!

HAHA!! The above recipe has been “Chef” and Kate APPROVED!! Seriously, my family LOVES this HEARTY THICK stew!! My niece even asks for it when she visits, proclaiming it, “THE WORLDS BEST STEW!!”  I always serve mine with buttermilk biscuits, no recipe… the Pillsbury Doughboy makes them!!
